Selling food is in many ways similar to selling any other type of product, but at the same time has a number of distinctions that sets it apart. When you sell food you will want to make that food look good and draw attention to the items that your shoppers perhaps otherwise wouldn’t have thought to look at – just as with any other products. At the same time though you also need to pay a lot of attention to making your items look healthy, clean and trustworthy. Perhaps unsurprisingly, people are very picky about the things they’re willing to eat. As such you need to ensure that you are arranging your stock in such a way as to instil confidence while also working their hunger/sweet tooth to your advantage. And then there are all the other things you need to think about that just aren’t an issue with other products…
Finding Suitable Spots
The first consideration you need to make with food – especially fresh produce – that you don’t need to think about when selling most other items, is whether or not the spot you’re presenting your food in is appropriate for those items.
For instance if you are selling fruit then you can’t very well keep that displayed in a palette by your front door. Why not? Because it only takes for a gust of wind to blow in some dust and dirt and you’ll end up with dirty and grubby fruit that won’t look good and that won’t be suitable to eat.
Likewise you shouldn’t keep perishable items near central heating unless they’re going to be in a fridge as you can otherwise make them too hot and cause them to get mouldy faster. Damp areas are also a no-go, and you should also avoid keeping foods too close to the floor in case animals get in or you have some kind of flood. Even light coming in through a window can cause things like bananas to ripen faster.
Does it Look Good?
But while too much light on your fresh produce might be a bad idea, you also need to ensure that you aren’t keeping food in a dark corner of the room where it’s not going to look half as tempting. Fruit and vegetables in particular look most tasty when they’re kept somewhere light and when the colours are allowed to pop. Thus you may want to invest in some good lighting that you can use to make those items look shiny and delicious.
Stock rotation is also very important – and especially when it comes to things that can go mouldy. If you spot any sign of an item going off then you should throw it out immediately. Not only will a mouldy banana make your food look far less appealing on a whole (and call its freshness into question), but it will also make other items go off faster too.
Whatever is in your food display should look tasty and fresh – though you do want to encourage older items to sell faster so you may want to bring them closer to the front as long as they’re still looking tasty.
Layout
The way you lay your food out is also very important. Here you need to ensure that your food is set out in a way that lets people find what they’re looking for while also having the opportunity to ‘stumble’ upon other items that they may otherwise not have thought of. This is why it’s so important to occasionally change your layout so that people are forced to do a little bit of searching. It’s also why it can be a good idea to have discounted sections which will get people rummaging and give them an opportunity to make impulse purchases and hopefully discover a new brand. POS displays are also invaluable this way.
Think logically as well about the way you organise your food items with regards to what people are likely to want at particular times. Having your deserts all in one place makes sense for instance as people will probably want to look in one place for pudding, but could it also make sense to put your coffee here in case those people are having a dinner party?
